How To Make Biscuits
To start off, the oven should be preheated. This crucial step ensures that the biscuits have the ideal conditions for rising and achieving a superb outcome.
Afterward, the dry ingredients should be combined. Subsequently, utilize a pastry cutter to divide the butter and shortening into small fragments.
Next, you’ll add the wet ingredients – the egg and milk. Then you’ll stir with a fork just long enough to incorporate them. You don’t want to overmix the dough or it allows too much gluten development which in turn makes a tough biscuit.
Following that, proceed to roll out the dough for the biscuit to a thickness of approximately 1 inch on a surface lightly dusted with flour. Make use of a cookie or biscuit cutter to shape the biscuits, or alternatively, employ a sharp knife to cut them into square shapes.

Ingredients
- 3 cups flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- ¾ teaspoon cream of tartar
- ¾ teaspoon salt
- ¼ cup shortening*
- ½ cup butter
- 1 egg
- ½ cup + 2 tablespoons milk
- 2 tablespoons melted butter for topping
Directions
1. Preheat oven to 400°.
2. In a large bowl, combine the flour, sugar, baking powder, cream of tartar and salt.
3. Use a pastry cutter (or fork) to cut the shortening and butter into the dry ingredients.
4. Once the shortening and butter are in pea-sized pieces, add the egg and milk.
5. Stir until just combined.
6. Dump the biscuit dough onto a surface that has been dusted with flour.
7. Use a rolling pin to flatten the dough to about 1-inch thickness.
8. Cut into circles with a biscuit cutter or use a knife to cut into squares. (I use a 2 ½” biscuit cutter)
9. Place biscuits on an ungreased baking sheet and bake for 12-15 minutes or until a light golden brown.
10. Brush with melted butter, if desired. Enjoy warm!
