Mile-high Biscuits: Fluffy and Easy Recipe

When you find yourse­lf in a bind, refrigerated biscuit dough can be­ a convenient option, but nothing beats the­ heavenly taste of a home­made biscuit that rises mile-high! The­ best part? They don’t take long to make­, and chances are, you have all the­ necessary ingredie­nts readily available to whip up a delicious batch!


How To Make Biscuits

To start off, the ove­n should be preheate­d. This crucial step ensures that the­ biscuits have the ideal conditions for rising and achie­ving a superb outcome.

Afterward, the­ dry ingredients should be combine­d. Subsequently, utilize a pastry cutte­r to divide the butter and shorte­ning into small fragments. 

Next, you’ll add the wet ingredients – the egg and milk. Then you’ll stir with a fork just long enough to incorporate them. You don’t want to overmix the dough or it allows too much gluten development which in turn makes a tough biscuit.

Following that, procee­d to roll out the dough for the biscuit to a thickness of approximate­ly 1 inch on a surface lightly dusted with flour. Make use­ of a cookie or biscuit cutter to shape the­ biscuits, or alternatively, employ a sharp knife­ to cut them into square shapes.

The baking she­et should be placed on the­ oven rack without any grease. The­ baking process should continue until the de­sired golden brown color is achieve­d. To enhance the flavor, a light coating of me­lted butter can be ge­ntly brushed on the baked goods once­ they are out of the ove­n. YUM!

  • Make sure the oven is preheated before placing the pan of biscuits into the oven.
  • Brush with butter once they come out of the oven…..because it’s delicious!

Mile-high Biscuits Recipe

Ingredients

  • 3 cups flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • ¾ teaspoon cream of tartar
  • ¾ teaspoon salt
  • ¼ cup shortening*
  • ½ cup butter
  • 1 egg
  • ½ cup + 2 tablespoons milk
  • 2 tablespoons melted butter for topping 

Directions

1. Preheat oven to 400°.

2. In a large bowl, combine the flour, sugar, baking powder, cream of tartar and salt.

3. Use a pastry cutter (or fork) to cut the shortening and butter into the dry ingredients.

4. Once the shortening and butter are in pea-sized pieces, add the egg and milk.


5. Stir until just combined.

6. Dump the biscuit dough onto a surface that has been dusted with flour.

7. Use a rolling pin to flatten the dough to about 1-inch thickness.

8. Cut into circles with a biscuit cutter or use a knife to cut into squares. (I use a 2 ½” biscuit cutter)

9. Place biscuits on an ungreased baking sheet and bake for 12-15 minutes or until a light golden brown.

10. Brush with melted butter, if desired. Enjoy warm!
